My favorite vegan blog Cest La Vegan has started to do videos as well. Totally awesome. I digg this one because it’s about bacon addiction. I used to have that too, a long time ago when I still used to eat a slim selection of the furrier inhabitants of this planet. (I’m sorry!)

Apparently in the States (those guys have all the cool vegan stuff, Diya – take a hint!) there is a crispy, vegan friendly substitute.

I was requested (read forced by the boyfriend…) to make more of those oat crackers I am trying to learn how to master. Spent the entire morning in the kitchen, like a menace, flying all over the place. Once the crackers where out of the oven I tried to take appetizing and compelling photographs of the creations. I’ll save the recipe for another day since I am still in theĀ  “a pinch of this” and a “splash of that” stage ^^ .

Ovenbaked vegetables - Veronica Stenberg

My new staple diet, served with vegan Tzatziki with enough garlic to kill a dragon – yum!

Below amount of ingredients serves two, increase amount to suit your growling tummy or amount of people sitting at your dinner table.

  • 4-6 small potatoes, divided in half
  • 2-3 red onions, divided in four
  • 6-8 baby carrots
  • 2 peppers, divided in rather big pieces
  • 2-3 whole garlic bulbs, with top cut off
  • your favorite herbs
  • a delightful splash of olive oil

Preheat oven to 200-220 C. Pour some olive oil into an oven tray, place your vegetables in the tray, brush with oil. For the garlic bulbs, pour some oil on top of them. Sprinkle your favorite herbs on top, a dash of salt if needed. Leave in the oven for 25-40 minutes and keep an eye on them. Once baked tender, take out and serve preferably with a healthy dose of Tzatziki.
